Ingredients

  • 8 poblano peppers⁠
  • 12-14 corn tamales
  • 2 cups crema⁠
  • 1 ½ cup corn ⁠
  • 1 tsp salt⁠
  • ½ tsp pepper⁠
  • 14oz Queso Oaxaca⁠ Tío Francisco
  • 1 tbsp avocado oil⁠

Instructions

  1. Roast the poblano peppers in the oven, air fryer, or stovetop with avocado oil. The skin should look burnt on all sides.
  2. Place on a cutting board and cover with a big bowl or plastic wrap to soften the skin. When cool, peel the skin off and remove the seeds. Cut into slices.⁠
  3. Slice tamales lengthwise.
  4. Place a layer of tamales in a greased 9×13 inch baking pan, followed by half of the poblano peppers, the crema, corn, and ⅓ of the Queso Oaxaca Tío Francisco. Season with salt and pepper, and repeat. For the last layer, add tamales, cheese, and corn.⁠
  5. Bake at 350º for 20 minutes or until the cheese is melted. ⁠
