Ingredients

  • 4 bolillo rolls or French rolls
  • 4 1/2 cups water
  • 12 ounces piloncillo or 1½ cups packed dark brown sugar
  • 2 cups of Tío Francisco Queso Fresco 
  • 1 cup of raisins
  • 1 cup of peanuts
  • 6 whole cloves
  • 4 cinnamon sticks
  • 4 tablespoons butter or spray butter

Instructions

  • Preheat oven to 350°F.
  • Cut bread in ½ inch cuts and spread butter on both sides.
  • Lay the bread on a baking sheet, bake until toasted.
  • Combine water, piloncillo, cinnamon sticks, and cloves in a large pan.
  • Heat to boiling point; lessen heat, making a syrup.
  • Remove cinnamon sticks and cloves.
  • Prepare your dish with non-stick spray, layer ingredients: 1/3 bread, 1/3 raisins, 1/3 peanuts, 1/3 queso fresco, and 1/2 cups syrup distributed over Tío Francisco Queso Fresco
  • Repeat step 7 until all ingredients have been used.
  • Cover the dish with aluminum foil.
  • Bake 40 min.
