Ensalada de Nopales

Ingredients

  • 1lb nopales⁠
  • 1 tbsp baking soda⁠
  • 1 ½ cups of Queso Fresco Tío Francisco
  • 2 tomatoes⁠
  • 3 spring onions⁠
  • 2 jalapeño peppers, seedless ⁠
  • 1 lime, juiced⁠
  • 2 tsp salt⁠
  • 1 cup cilantro⁠
  • 1 tbsp white vinegar⁠
  • ½ tsp pepper⁠
  • 1 tsp oregano⁠

Instructions

  1. Chop the nopales into small pieces and toss with 1 tsp salt. Set aside and wait 40 minutes. This will help the nopales be less sticky. ⁠
  2. Chop the rest of the ingredients and set aside. Rinse the nopales, add them to a pot with boiling water, and add baking soda. Cook for 15 minutes and drain.⁠
  3. Mix all the ingredients in a big bowl and season with salt, pepper, and oregano.⁠
