Ingredients

  • 4 boneless, skinless, chicken breasts
  • ½  Thinly sliced medium sized tomato
  • 2 cups Spinach
  • 3 cups Tío Francisco Queso Oaxaca
  • 2 tbs Chicken seasoning of preference
  • 1 tbs Garlic salt
  • 2 tbs Basil leaves
  • 2 cups Freshly squeezed orange juice

Instructions

  1. Preheat the oven at 425°F
  2. Start with 4 good-sized chicken breasts.
  3. Create a “pocket” on the inside of the breast, without cutting all the way through.
  4. In a bowl, mix the orange juice, garlic salt, basil leaves, and your preferred chicken seasoning.
  5.  Let the chicken breasts sit in this mixture to marinate. (10 mins)
  6. Stuff the “pocket” with the sliced tomatoes, spinach, and Tío Francisco Queso Oaxaca.  
  7. Place your stuffed chicken breasts  in an oven-safe dish and allow the chicken breasts to cook for approximately 10-15 mins or until golden brown.
