Ingredients

  • 3 cups of birria
  • 4 corn tortillas
  • 1 cup shredded Tío Francisco Queso Oaxaca
  • ¼ cup of birria broth
  • ¼ white onion, chopped
  • 1 handful fresh cilantro, chopped
  • 1 lime, quartered

Instructions

  1. Pour ¼ cup birria broth into a bowl and set aside for later.
  2. Shred the 3 cups of birria.
  3. Begin to heat a large nonstick or cast-iron skillet over medium heat.
  4. Dip each tortilla into the birria broth on one side then lay onto the hot pan, broth-side down.
  5. Sprinkle 1/4 cup of Tío Francisco Queso Oaxaca to cover each tortilla, then sprinkle about 1/4 cup meat over half of each tortilla.
  6. As the cheese starts to melt, fold each tortilla in half to cover the meat.
  7. Garnish with onions and cilantro to taste.
