Ingredients

  • 1 lb Ground Beef
  • 1/3 cup Tío Francisco Queso Cotija
  • 1 10 oz can Enchilada Sauce
  • ¼ cup Breadcrumbs
  • 4 tbsp Milk
  • 2 egg yolks
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Oregano
  • 2 tsp Cumin
  • 2 tsp Chili Powder
  • 1 tsp Salt and Pepper
  • Cilantro (garnish)

Instructions

  1. Preheat oven to 350°F
  2. In a small mixing bowl, combine breadcrumbs and milk.
  3. Fluff with a fork until the breadcrumbs have absorbed the milk. Set aside.
  4. In a medium mixing bowl, combine raw ground beef, spices and egg yolks.
  5. Add the breadcrumb mixture to the ground beef and combine.
  6. Once combined, roll meatballs into 1-inch sized balls and place in a 9×13” baking dish.
  7. Cover meatballs with enchilada sauce and bake for 20 minutes or until cooked through.
  8. Top cooked meatballs with Tío Francisco Queso Cotija and garnish with cilantro
