Taco Stuffed Sweet Potato

Ingredients

  • 4 Sweet Potatoes
  • 1 15 oz can of black beans
  • 1 15 oz bag of frozen roasted corn
  • 1 cup Tío Francisco Queso Cotija
  • ½ cup diced yellow onion
  • 3 green onions
  • 2 tbsp taco seasoning
  • 1 jalapeno (sliced)
  • Tío Francisco Crema Centroamericana
  • ½ cup pickled red onion (optional)
  • Cilantro
  • Salt and Pepp

Instructions

  1. Cut sweet potatoes in half
  2. Season with salt, pepper and olive oil
  3. Bake sweet potatoes at 400°F for approximately 40 mins, or until tender
  4. Sautee black beans, corn and yellow onion with taco seasoning and a bit of olive oil until heated through
  5. Top sweet potatoes with black bean mixture
  6. Garnish with pickled red onion (optional), jalapeno, Tío Francisco Crema Centroamericana, cilantro and Tío Francisco Queso Cotija
